Gensaka Sake Brewing was founded by the first generation, Hachibe, in 1805 during the late Edo period. The village of Yanagihara, where the brewery is located, has a thousand-year history of offering rice to Ise Jingu Shrine, making it a historically significant place for rice cultivation. They started their own cultivation in 1990 to preserve the local rice cultivation and sake brewing traditions. They focused on cultivating the indigenous variety called "Ise Nishiki" and dedicated a part of it to organic rice cultivation without pesticides and fertilizers.
The concept of their sake quality is "More than a glass of surprise, it's a night of peace." Their goal is to produce sake that is not just impressive with one sip, but a sake that can be enjoyed continuously, a must-have for an evening drink.
