Takachiyo has over 150 years of tradition in hand-crafted sake brewing. Located at the foot of Mount Makihata—one of the heaviest snowfall regions in Niigata Prefecture—the brewery benefits from abundant natural resources. The melting snow becomes exceptionally soft water, which is drawn from an 80-meter-deep underground spring through stainless steel pipes without exposure to air, ensuring purity and freshness.
Takachiyo is also known for polishing all its rice in-house using the "henpei" (flat milling) method—a highly meticulous and time-consuming process that preserves the integrity of the rice’s flavor core. This attention to detail is reflected in the elegance and clarity of their sake.
