sunRise belongs to Takachiyo Shuzo's colour-coded hiragana Takachiyo series, where each label colour hints at the flavour inside. The orange mikan label is a limited winter release timed to Japan's mandarin season; after pressing, the sake is stored near freezing and bottled unfiltered, unpasteurized and undiluted at 16% ABV.

Although nothing but rice, koji and water goes into it, the sake has a clearly citrus, mandarin-like character. Clean, soft sweetness is followed by lively acidity, a faint natural spritz and a crisp finish. Serve well chilled as an aperitif or with lightly spiced dishes.
