The green label is the first new-season release of Takachiyo Shuzo's hiragana Takachiyo series, from Minamiuonuma, Niigata. It is pressed from that autumn's rice, polished at the brewery with its own flat-polishing method, and bottled as an origarami nama genshu: unpasteurized, undiluted and lightly cloudy with fine lees.
The aroma is gently fruity, led by grapefruit with hints of pear and white grape. The lees give the palate a soft, creamy feel, and lively acidity balances a fresh sweetness before a clean, slightly bitter finish, a departure from Niigata's classic dry style. Serve well chilled and keep refrigerated.
