RYUSEI Extra Blend
A free-spirited creation with no fixed recipe, Ryusei Extra Blend represents the brewer's artistry and instinct. Each year, a different combination of sakes is blended to achieve a one-of-a-kind harmony that cannot be reached by a single brew. The 2024 BY edition brings together Junmai Daiginjo YamadaNishiki (40%), Omachi brewed in wooden vats, and YamadaNishiki (60%) fermented with Yeast No.7. It opens with bright, juicy aromas of green grapes and fresh fruit, followed by Omachi's round umami and depth, finishing clean and dry withthe signature sharpness of Yeast No.7. Initially firm and tight, the texture mellows with time after opening, revealing layered complexity and elegant balance that can be enjoyed from chilled to warm.

TOYO BIJIN Junmai Daiginjo Ichibanmatoi
This daiginjo-grade sake in the junmai style makes useof a 40% grain polish and lengthy fermentation at a low temperature to give it a velvet-smooth mouthfeel from beginning to end. A scent of strawberries and vanilla gives way to charming and voluptuous savory notes. Clear, pale colour. Aromatic and refined with a nice fruity nose. Some pear and ripe apple notes. Smooth, elegant and seamless on the palate, with faint hints of white pepper, chocolate and hazelnut. Very textural with some sweetness (it's dry, so this is an impression of sweetness) and a long finish.

It offers an elegant, transparent sweetness paired with a graceful aroma of banana, melon, and strawberry. The palate is soft and refined, with gentle umami, pure sweetness, and a delicate acidity that leads to a clean, polished finish. Brewed in limited quantities as a commemorative collaboration, this sake is bottled in a beautifully designed tube—fitting for a “goddess.”

KAGURA Junmai Daiginjo White
This sake showcases the rich aroma of rice and complex flavor layers. It isknown for its subtle balance of sweetness, acidity, bitterness, and astringency, creating a harmonious and smooth taste. The slight acidity spreads over the tongue, distributing the rice aroma throughout the mouth, providing a wonderful and comfortable experience. As an unfiltered sake, it has a unique texture, and being unpasteurized, it retainsthe lively yeast notes, enhancing the sake's vitality. The alcohol content is 15%-17%, made from "Iwai" rice with a 35% polishing rate, using Matsui Brewery's original yeast. It can be enjoyed chilled, at room temperature, or slightly warmed. As the sake is unfiltered, some rice components may remain in the bottle.

KAGURA Junmai Daiginjo Black
This sake is brewed using the renowned Yamada Nishiki sake rice and you can clearly sense its Ginjo essence. On the nose, this essence is sweet and lingers but, on the palate, the taste is clean and crisp. As the sake is unfiltered, some rice components may remain in the bottle. It is unpasteurized so you will also sense the lively yeast notes. An explosion of fruit on the nose and the palate reflects the same, lush fruit. Apple, papaya and cantaloupe. Full-bodied with a refreshing finish.
