ZAKU Junmai 'Ho no Tomo'
One of the three incarnations of Zaku in a junmai style, Ho no tomo offers the ideal balance of flavorand aroma. Presenting an initial scent of lychee and fruit character, proceeding into a subtle sweetness,and finishing with a light after taste, it expresses the character of rice grain in a gentle, harmonious manner, as its name suggests. They named their sake "Zaku" (which means "the work") to express their feeling that sake brewing does not end with bottling the beverage. The work is continued by the liquor store that sells it, the restaurant that serves it, and the connoisseur who drinks it.

Green apples, mild honey and pineapple on the aroma with stone fruits on the palate. Soft vanilla notes with a smooth mouth feel yet good tension, good precision with a hint of balanced acidity and a polished grainy texture. They named their sake "Zaku" (which means "the work") to express their feeling that sake brewing does not end with bottling the beverage. ZAKU Junmai Daiginjo Kaizan Ittekisui
Beautiful nose of pear and white flowers. Lychee, mint, green apple. Bright palate and candied pineapple. Ripe, red apple. Silky textures, elegant and balanced acidity. Pure and clean. Using Yamadanishiki rice, which is most suitable for sake making, it is milled up to 40% of the rice grain and brewed slowly at low temperature. It is Junmai Daiginjo, which has a noble and dignified taste and a good lingering aftertaste, just like 槐 (enju), which has been called a noble tree since ancient times.

The Zaku IMPRESSION Collection is a reflection of the innovative attitude of Seizaburo Shimizu. The collection is complete with all 4 models. "M", "G", "H" and "N". The names are taken from the first letters of "Keinochi", "Gennochi", "Hotanochi" and "Nakazato" respectively. The direct-draw version of each product is called "Maki-impression". It is a direct-draw version in which the sake is squeezed into the bottle without being returned to the barrel for storage. The "H" in IMPRESSION-H is derived from the "H" in "Ho noTomo".

ZAKU Impression N
This is the highest-ranking sake in the IMPRESSION series. The letter "N" stands for "Nakadori" (middle portion of the pressed sake), the finest and most elegant portion of the tank using "direct-draw" which means that the sake is bottled directly without mixing it with other sakes directly from the tank, and because it skips the fine-tuning of the flavour, it is known as a super-natural, fresh sake that is brewed oncea year for a limited time only. The sake label is combined with the vine flower, a symbol of longevity and prosperity, which has been used for dyeing Japanese kimonos for 1,000 years.

ZAKU Junmai Ginjo Aiyama
Made entirely from Aiyama grown in Hyogo Prefecture, this sake has the well-rounded sweetness of Aiyama and floral aroma that is characteristic of Zaku. Other limited edition under this series features Omachi from Okayama and Kaminoho from Mie. It has a rich and unique floral and fruit aroma, a smooth wine quality,a sweet taste mixed with a slight fruity acidity, a mild rice flavor, and are freshing aftertaste. The overall sweetness and sourness are balanced and rich in layers. It is a work that everyone loves! If the sake is allowed to decant at room temperature, the fruity aroma will become more intense. The recommended drinking temperature isaround 5-15 degrees.
