Using "sake" instead of water at the last phaseis the sake called 'Kijo-shu'. This leaves a lot of sugar that would otherwisebe broken down by yeast and produces sweet and rich sake like a high-endsweet wine. Please enjoy it with desserts as a digestif. With food, Fried scallops and abalone with XO sauce, Chinese cuisine such as Stir-fried shrimp with chili, Dessert such as Cream brulee, vanilla ice cream. Western cuisine such as Saute of foie gras.
