A free-spirited creation with no fixed recipe, Ryusei Extra Blend represents the brewer's artistry and instinct. Each year, a different combination of sakes is blended to achieve a one-of-a-kind harmony that cannot be reached by a single brew. The 2024 BY edition brings together Junmai Daiginjo YamadaNishiki (40%), Omachi brewed in wooden vats, and YamadaNishiki (60%) fermented with Yeast No.7. It opens with bright, juicy aromas of green grapes and fresh fruit, followed by Omachi's round umami and depth, finishing clean and dry withthe signature sharpness of Yeast No.7. Initially firm and tight, the texture mellows with time after opening, revealing layered complexity and elegant balance that can be enjoyed from chilled to warm.
