Natsu no Shippu ("summer gale") is the summer seasonal from Heiwa Shuzo's KID range in Wakayama. It is a pasteurized Junmai Ginjo brewed mainly from Gohyakumangoku rice, polished to 50% for the koji rice and 55% for the rest, with soft water from the underground flow of Mount Koya.
It opens with a cool, refreshing aroma some tasters compare to green muscat. The palate is smooth and light, with clean, gentle sweetness and lively acidity that gives a dry, sharp finish. Served at 5–8°C it is crisp and bracing; as it warms, a rounder rice savouriness comes through.
