Black Label is the Junmai Daiginjo of Fujii Shuzo's Classics range, brewed in Takehara, Hiroshima, by a family brewery dating to 1863. It uses Yamadanishiki polished to 50% and the traditional kimoto method, fermenting with the brewery's own resident yeast, and is pasteurized once before release.

The aroma is mellow and suggests ripe fruit. On the palate, generous Yamadanishiki umami is lifted by supple acidity, giving more depth than a typical delicate daiginjo. Serve chilled up to room temperature; it holds up well to richer, savoury dishes.
