Ohmine 3 Grain Dewasansan comes from Ohmine Shuzo, a revived brewery in Mine City, Yamaguchi. It is brewed only from rice and koji, using Dewasansan rice polished to 50%, which places it in junmai daiginjo territory. Ohmine's grain series names each sake by its rice, and this bottle shows the soft, aromatic side of Dewasansan.
The nose leans fruity, with muscat, ripe melon and fresh pear. The palate is medium-bodied and silky, with lively grapefruit-like acidity and a light bitterness balanced by a mineral edge, leading to a crisp finish. This pasteurized edition is bright and food-friendly; serve it chilled in a white wine glass.
