2 Grain is the top of Ohmine Shuzo's regular range: Yamadanishiki rice milled down to 35% and bottled as an undiluted junmai at a moderate 14.5%. The brewery in Mine, Yamaguchi, makes it year-round in small batches so it reaches drinkers fresh, aiming for a balance of sweetness, umami and acidity.
Expect aromas of pear and white peach and a juicy, rounded palate with a mineral thread through the middle. The finish is gently bitter, with hints of cacao and orange peel. Serve chilled in a wine glass so the aromatics can open.
