MONAD comes from Shimizu Seizaburo Shoten, the Suzuka brewery in Mie behind Zaku, and is its take on sake made for the wine glass. It is brewed only from Yamadanishiki polished to 55%; the aroma suggests pear and green apple, and the palate is clear, quietly savoury and clean.
Each 750 ml bottle shows the year the sake was pressed rather than the usual brewing year, so it can be collected by vintage. The brewery suggests serving it lightly chilled in a large-bowled wine glass, as you would a crisp, dry white.
