2 Grain sits near the top of Ohmine Shuzo's range, and this limited edition is brewed with Aiyama, a rare Hyogo rice often called the diamond of sake rice and prized for its soft, rounded sweetness. The rice is polished to 40%, and the sake is bottled undiluted as a pasteurized junmai genshu at the brewery in Mine, Yamaguchi.
Expect a fruity, gently sweet profile with Ohmine's usual balance of umami and bright acidity, and a clean finish. Serve well chilled in a white wine glass so the aroma has room to open, and keep the bottle refrigerated to hold its freshness.
